Woman preparing l'aïoli. This is a typical provençal dish made with cod and boiled vegetables, served with the celebrated mayonnaise prepared with garlic. The woman is crushing the garlic in a white, marble mortar, the sides of which always remain oily despite thorough cleaning. This is the origin of the provençal saying ‘lou mortié senti toujours l'aiet’ – ‘the mortar always smells of garlic’. She is seated upon a small, stone bench, with a bottle of oil and a string of garlic beside her.
