vegetables essential to the preparation of l'aïoli – a cauliflower and a string of garlic. For centuries past the Provençal people has used garlic not only for its culinary qualities, but also for its medicinal properties: as an infusion or herb tea; as an enema; for chest aliments and for hypertension. Since the first half of the 19th century this peasant woman has taken her place amongst the leading santons of the crib.
