woman with snails
Woman selling snails. Ladle in one hand, she carries an earthenware pot containing snails, in the other. These are the little grey snails gathered on dumps of fennel, and boiled in salted water flavoured with orange peel and fennel, following the recipe for ‘l'aïgo sau’. To attract her customers, the snail seller sings a pretty song in provençal: ‘A l'aïgo sau lei limaçoun, nia de gros et de pichoun’. She is clad in a light-coloured dress, a black apron and a big, red flowered shawl, crossed over her bosom.
