Old man preparing l'aioli. This is a typical provençal dish made with cod and boiled vegetables served with the renowned mayonnaise prepared with garlic. The man is crushing the garlic in a white marble mortar, the sides of which always remain oily despite thorough cleaning. This is the origin of the provençal saying ‘lou mortié sente toujours l'aiet’ – ‘the mortar always smells of garlic’. He is seated upon a small, stone bench with a bottle of oil placed beside him.
